Our filled and specialty pastas are made using traditional methods; mixing dough by hand, rolling sheets of pasta, or sfoglia, with the mattarello, the long wooden rolling pin of the Italian grandmother, and cutting with our collection of traditional tools.

Who's Dave?
Dave started cooking in NOvi michigan, where he met alise, his wife and business partner. the two honed their culinary skills in New York city, working in a number of restaurants. upon moving back to ann arbor, dave took a job at Grange kitchen and bar, where he made the move from cook to chef. Dave makes pasta Started as a hashtag for the weekly pasta special at Grange, Pasta Thursday. dave used every thursday as a chance to try new pasta shapes and sauces.
"I realized that if i wanted to try all of these traditional pastas, i would have to learn how to make them myself. from there an obsession was born." during the pandemic, dave started selling pasta kits, which lead to selling pasta and sauce in local stores, and eventually to a full-time gig.
